With fall and winter weather across the globe more of us are spending time in the kitchen looking to warm the body with delicious foods. Running out ideas for dinner can be a headache for any Vegan, so I have prepared a list of 5 vegan dinner recipes that are yummy and healthy.

Chipotle Veggie Soup– A medley of organic vegetables gives this wholesome stew loads of nutrients and a hearty broth. Chipotle peppers and flavorful Mexican seasonings add spice, while whole green beans and chunks of corn and squash make for a pleasing, colorful presentation.
Veggie Chilli– This uniquely rich chili combines warm spices and chocolate — like a Mexican mole sauce with traditional vegetarian chili ingredients. Delicious with fresh corn-studded corn bread and maple butter and a crisp, light green salad.Serve garnished with sour cream and avocado slices, if desired.
Caponata Linguine– This hearty pasta sauce features eggplant matched with the bold flavors of capers, olives and balsamic vinegar. Make a day ahead of time if you can, as the flavors will be even better the next day. Serve with a light green salad, Italian bread and your favorite red wine.
Roasted Bell Peppers with Quinoa– There will be looks of envy from the meat-eating crowd when you serve this colorful and delicious entrée of bell peppers stuffed with mushrooms, carrots, spinach, quinoa and cashews. For a beautiful presentation, choose a combination of green, red, orange and yellow bell peppers.
